Viticulture & Cellar

Winery Paul Weinblatt Decoration White

Our vineyards are located in and around Leobendorf, below the historic Kreuzenstein Castle, in the heart of the southern Weinviertel. Here, north of Vienna, the continental climate of the Weinviertel meets Pannonian influences - an interplay that makes our terroir unmistakable.

We believe in wines of origin - characterized by their location, grape variety and vintage. Our work is not aimed at international uniformity, but at typicity, authenticity and expression.

Terroir, climate & soil

This is what characterizes our terroir:

Climate

Hot days and cool nights ensure slow, aromatically complex ripening. The Pannonian influence brings dryness and warmth, while the proximity to the foothills of the Alps ensures a balanced climate.

Floor

Our sites are characterized by calcareous loess, loess loam and partly loamy-silty or sandy inclusions. Soil types such as black earth and raw soil offer optimal conditions for healthy growth, deep-rooted vines and high grape quality.

Location

The south-east to south-west facing slopes around Leobendorf offer ideal sunshine and a long growing season - perfect for balanced ripeness, natural acidity and expressive aromas.

THE RESULT

We vinify wines that are typical of their region and variety and reflect what makes our region special: clear origin, fine structure, mineral tension and a style that is unmistakable for the southern Weinviertel - from peppery Grüner Veltliner and fragrant Sauvignon Blanc to juicy Zweigelt and powerful Merlot.

Vinification - our signature in the cellar

As natural as possible, as precise as necessary

Winery Paul Schleife Decoration Gold

In our vineyards around Leobendorf and Burg Kreuzenstein, we lay the foundation for what we consistently continue to do in the cellar: authentic wines with provenance. Our aim is to vinify wines that are typical of their region and variety and that clearly show where they were grown - in the southern Weinviertel, on limestone-rich loess and clay terraces, with plenty of sun, wind and structure.

Our philosophy in the cellar:

We work with as few interventions as possible - but with great attention to every detail.

Targeted reading

We harvest at the optimum ripening time - efficiently, but with a focus on healthy, fully ripe grapes. Only healthy, ripe grapes are brought into the cellar, which are processed gently and according to variety.

Fermentation with flair

Depending on the variety and vintage, we rely on spontaneous fermentation or specifically selected pure yeasts to emphasize the natural character.

Gentle processing

We avoid unnecessary pumping, do not use aggressive filtration and work with controlled temperature management for maximum flavor preservation

Expansion with character

Stainless steel tanks for freshness and clarity, wooden barrels for structure and depth - depending on the grape variety, style and potential.

THE RESULT

Our focus is on wines with a clear varietal character - from spicy, fresh Grüner Veltliner and fruity Muskat Ottonel to dense Merlot or elegant Zweigelt. Every wine should show where it comes from - not who made it.

We do not vinify for trends, but for authenticity, origin and longevity.

Our special features

When Grüner Veltliner breaks new ground

Winery Paul Schleife Decoration Gold

In addition to our white and red wines typical of the region, we also produce very special specialties - characterized by origin, craftsmanship and character. Whether noble sweet or high-proof - both are united by the signature of our house: precision, typicity and independence.

The nose reveals ripe yellow fruit, stone fruit and fine honey notes. On the palate, the wine is wonderfully balanced, very long and complex - a harmonious interplay of sweetness, freshness and depth. Ideal as a dessert wine or gift for special occasions.

Ice wine

Grüner Veltliner in its noblest form

Bottle of Paul Eiswein from Leobendorf with white label and screw cap

Our ice wine made from Grüner Veltliner is a real highlight - made from frozen grapes, harvested by hand at freezing temperatures. With 199 g of residual sugar and a vibrant, crisp acidity, the result is a sweet wine with a compact, creamy texture, plenty of tension and great ageing potential.

Gin meets Veltliner

Our signature gin from the Weinviertel region

Bottle Paul's V'Gin - Veltliner infused, 0,5l, 40% Vol.

A gin with a clear signature: Our gin meets Veltliner gets its special aroma from the refinement with Grüner Veltliner. The fruity elegance of Veltliner meets classic botanicals - the result is a delicately spicy, multi-layered gin with a regional character and an international format. Whether pure, in a tonic or as a creative cocktail - this gin brings the Weinviertel to your glass. Limited, regional and unmistakable.
